[pct-l] RE: dehydrating cheese



I haven't had good luck dehydrating cheese - it's too fatty.  I mix in a
Vermont Cheddar Cheese powder I purchase from King Arthur's Flour baking
company after dehydrating foods.  That works well to increase calories
and flavor.  I also carry fresh cheese.  I wrap fresh cheese in a paper
towel soaked in white vinegar - it reduces mold formation and keeps it
fresher.
