[pct-l] RE: dehydrating cheese
Hi,
another alternative which I've used on a short trip is to get *dry*
cheese. I've found it at Rumanio cheese local factory store here in
Crescent City, CA. As the name implies it is much drier than regular
cheese so it keeps better. I'm not sure how they dry it but recall
reading an article that this is an old time method of keeping cheese for
long periods. Cheese probably dried with some form of ageing.
