In looking over some Pemmican recipes last night, it's mainly just dried meat, that's ground, along with animal fat to hold it together in a bar shaped form. If prepared correctly, the stuff keeps for a loooong time without refrigeration or vacuum sealing. So, I guess with the proper preparation, animal fat shouldn't go rancid. Daniel
