Maybe, but I wouldn't risk it, if only for the smell. Consider instead, 
Starkist tuna, which now comes in pouches with virtually no water. See:

It's not the humidity or lack of it, but the amount of standing water 
nearby. I hiked a lot of the Mojave last summer (Joshua Tree, Mojave 
Preserve & Death Valley) and did not see one mosquito.

The Mojave gets its rain in CA rainy season from November through February. 
Afterwards, it's pretty dry. The following website confirms the other - 
http://www.desertusa.com/wildflo/ca.html - saying its been dry meaning very 
little is blooming which is disappointing.
