This is something I learned from Roberta Cobb at an ALDHA-west gathering.
She seals small amounts of olive oil in vacuum packs for her meals.  How the
heck does she do it?  She freezes the oil first in meal sized amounts, then
quickly vacuum seals them.  They are protected from air and much less likely
to go rancid.  Of course, this works best for the lots of little bags people
vs just a few big bags people.
