[pct-l] dehydrating
I have no problem dehydrating shredded cheese. It becomes quite brittle
when dry, and retains a slight sheen from the oil that is extruded. I
use a fruit leather insert, and spread the cheese thinly across the
tray. When it's done, it comes off in one big round peace. I'll blot
it a bit with a paper towel, and break it up into the servings. I've
never been able to keep it for longer than two weeks, it's too tasty in
its dehydrated state to just leave around. <g>
