Don't laugh, but Adventure Foods at http://www.adventurefoods.com/ has 3 kinds of powdered wine. I tried the Sherry just for the hell of it and was impressed. It wasn't like having a bottle of Sherry (1 sip for the cook, 1 glob for the pot ala Julia Childs) but it added the taste (mostly) that I was looking for.
