Even regular mummy bags can be used as a quilt by unzipping it all
the way and laying the bag on top of you rather than around you.

Depending on the weather I can start the night out just using my
silk bag liner, add the down bag in 'quilt-mode' later in the night
and in the very early morning, when it is often the coldest, climb
in and zip up the bag for warmth.

I also find that wearing a fleece or wool hat to bed really
helps to get me warmed up on those cool nights.
