Good morning, Kathi,

I use an inexpensive, cylindrical, multi-tray, American Harvest dehydrator. 
It works fine for me at about 1/10th the cost of the premium makes. 
Dehydrators seem to be a fad appliance, and many can be found at local yard 
sales or on eBay.  That would be a good place to start, then after gaining 
some experience you can either continue using it if it meets your needs, or 
kick it to the curb and get something better.  The same thing can be said 
for a plastic-bag vacuum sealing machine which would go well with your dried 
food operation.
