I think an occasional on-the-trail zero day would be delightful, but one of the advantages to town zeros is that you have access to lots of high-calorie food that you usually can't take with you on the trail (like ice cream!).  And sleeping on a real bed often provides more actual rest than sleeping on the ground.  But yeah, if you're strapped for cash, on-the-trail zeros are easy to do.
