Little late on the cheese thing, but just got back from Donahue Pass.   Take 
whatever cheese you like.  I like sharp cheddar, personally, and  Swiss.  In 
three days it will be oily and darker in color but still  good.  I have *never* 
had any kind of cheese go bad in three days.... but  maybe don't take cottage 
cheese...Har
