[pct-l] cheese
Good evening, Sweet Goat Mama,
For 2 or 3 days of average temperatures, individually wrapped string cheese
keeps well. That's not very high-classed like your more pretentious deli
brie, canberra, or provolone, but my taste on the trail is rather plebeian.
As a matter of fact, the "cheese" that I use the most is the dry, powdered
cheddar cheese, similar to the stuff that comes in the little envelope with
Mac & Cheese. I buy a whole big tin can of the stuff and it keeps for a
long, long time with reasonable protection from moisture. I think it
tastes better than the Mac & Cheese stuff but it doesn't have quite as much
yellow food coloring or salt. Also, I'm not limited to what is in the
packet. I can dump on as much as I want. I use it not only on mac, but
also on any other kind of "glop au gratin" that I'd care to make.
One other good use for the powder is a spread for crackers or bread. I
carry about 1/4 cup of the powder in a snack-size Ziploc bag, then a few
minutes before lunch time I dump in some water ... or better still, oil ...
and kneed it around a bit while it soaks. If the result is thick, use it
for
a spread or dip. If it is thinner, tear a hole in the corner of the bag and
squeeze it directly onto your cracker.
