Can someone recommends a good cheese for packing that will last 2 or 3 days?

The one cheese that I've found works well in "cool2warm" weather on hikes is
Dry Jack cheese, found in your more pretentious deli sections. It's usually
near the brie or canberra cheeses.  I've found it in Raley's Market Deli .
It is almost like candy, and about $6-$7lb. It is covered in wax and comes
off big wheels. I wish I had a slice right now!!
