Here's a trail bar recipe that I developed a couple of years ago and have
been pretty happy with. Keep in mind that these things do get stale, so
they are probably not good to ship to yourself on the trail. I use them
mostly for shorter jaunts, especially in winter.
Davey Bars
cream together with mixer:
1/3 c. butter
1/2 c. sugar
1/2 c. honey
1 egg
mix together in bowl:
1 c. whole wheat flour
1/2 c. dry milk powder
1/4 c. wheat germ
1/4 c. soy flour
3/4 t. baking powder
1/4 t. baking soda
1 t. salt
2 T. cocoa powder
mix dry ingredients with butter/sugar, then add:
1/2 c. milk
1 c. quick oats
1 c. chopped dried pineapple
1 c. chocolate chips
1 1/2 c. chopped pecans
bake in greased 9x13 pan at 350 degrees for 30 minutes
cut into whatever bar shape suits you
you can easily make substitutions for the dried pineapple and pecans if
you'd prefer other things
I worked out the nutritional contents of this recipe:
6.1% protein
37.9% fat
56% carbs
