I read that they started as cheap bibs to keep your clothes clean. Consider
having no laundry facilities and no showers (I'm talking medieval days, not
thru hikers!) Having a piece of cloth convenient to keep spills off the
clothes and to wipe your hands. Eventually the more wealthy started making
them of fancier materials to show off.
