I loved to make quesadillas with olive oil, tortillas, and (of course) cheese! Easy and tasty.
The other thing that rocked was the small Boboli pizza breads with the Boboli sauce. I would fry the bread in olive oil (the crust would fit just right in my pot), flip it over to cook the other side, then add the sauce and cheese on the top of it. By frying the bread, it would not taste dry and bland and it would be hot to melt the cheese. I'd finish it off with olives and chow it down. The sauce packs were a perfect size and in a sealed plastic bag! Mmmmm, I ate many of those one the trail this year.....Now, I'm hungry.....
