Those weird cactus above Scissors Crossing (I've forgotten their name)
The hole in the LA Aquaduct at post #1986 that lets you get water. (Hey,
it was as wonderful sight at the time.)
The view from any of the high passes in the Sierras (For me, it was really
that moment when you crested a pass and a whole new spectacular world
opened up.)

Boiling Springs Lake - Mt. Lassen park
Lava beds around MacKenzie Pass in Oregon.
Bakery in Stehekin
Let me add a few that are not quite on the trail but are great side trips.
Mt. San Jancito - The summit isn't that far off the PCT. You could even
continue north and meet up with the PCT later. I didn't do this because
I was worried about adding any extra challenges early on. In
retrospect, I wish I had taken the side trip. It's still on my "to do"
list as a result.
Olanche Peak - southern sentinel to the Sierras.
Sierra Butte Fire Lookout post - northern sentinel to the Sierras.
I like these two because they're nice bookends to one and other. And or
course, the views are nice too.
