Singular Sausage (Great camping/trail meat) (Make ahead recipe)

5 lb  lean ground beef
5 tsp Morton's Tender Quik Curing salt (or any curing salt)
2 tsp coarsely fresh ground pepper
2 tsp garlic salt
2 tsp mustard seeds
1 tsp hickory smoked salt

Mix all the spices together. Crumble the meat & thoroughly mix in the spices
with your hands. Cover & refrigerate for 24 hr. On the 2nd day, mix again, &
refrigerate for another 24 hr. On the 3rd day, shape into 5 rolls - 1 1/2"
in. in diameter. Put on a metal rack 2" apart & bake for 8 hr @ 150 F,
turning every 2 hr.
Note: Custom tailor the seasonings to your taste, & vary from batch to
batch. Ex. chopped onion or dried onion flakes/powder, savory, sweet basil,
thyme, rosemary, marjoram, cloves, Worcestershire, soy sauces, etc.
Place in ziploc bags & squeeze out any air & create a "vacuum seal".
Keeps several days without refrigeration. Refrigerate or freeze for
long-term storage (Freezer: eat within 6 mth).
Costs less than half of purchased sausage, & is scrumptious!
