I'm another cheerleader for freeze-dried foods / mix your own. On the AT I bought from Nitro, but their selection and quality wasn't that great. Then I discovered Providence Pantry ( beprepared.com ). They're in Utah, (surprise!) but assured me they'd sell to Methodists. I've used their fruits, veggies, meats, and cheeses, and I love it. High quality taste, low weight, reconstitutes quickly ( I now use cold water since I've gone stoveless, but it still does well). I mix store-bought cous-cous, instant mashed potatoes, stovetop stuffing, etc. for variety and carbs. I make up meal-size portions in individual ziplocks, and they keep for a long time. 

I know there are other good suppliers, but Provident Pantry is the one I have found that suits my needs. Only drawback is cost - a #10 can of meat can be pretty pricey, but it goes a long way. I haven't tried to calculate a cost / meal, so it may not be that expensive on a per meal basis.

New Freeze Dried Meal Buckets! SALEHere is an ad that I've been telling people about. I made my own freeze-dried meals using some of these irems. The chicken is wonderful as are all the veggies. If you want decent eggs, get the OvaEasy; they almost taste real and I despise freeze-dried eggs. The cheese is very good, but don't use hot water to rehydrate things or it will melt (unless you want it to). The ham has a definite smoked flavor which I don't like, but the sausage is good. I make my own dehydrated hamburger, so I didn't use their's. The great thing is that they'll ship to you for $5, no matter how much you buy. I don't know if you can get the sale prices if it's shipped, but even the regular prices are better than buying prepackaged meals and you can control your ingredients. As for sauces and seasonings, I found a lot at the 99 Store, an asian store. That's not the 99cent store.
