Dear Mike,
How much hiking have you done? Maybe just take 3 weeks off work and do a
section of the PCT. Or just take 2 weeks (or less) and do the JMT. This
will give you an idea if this is for you and how fast you want to walk off
the miles.
I wouldn't quit my job until after I've done a couple of section hikes and
base my decision on a little more experience.
