I really like soba noodles, which are made from buckwheat flour. I
really like the flavor, plus buckwheat is one of the few plants that
is a complete protein(meaning it has all the essential amino acids),
so it is very nutritious. Being flat noodles, it also packs well, and
it cooks very quickly. I think some soba noodles contain wheat, but
the good stuff is 100% buckwheat and thus gluten free. You can find
soba noodles at most health food stores and asian markets. It can be
fairly expensive, but you can also order it in bulk at health food
stores, I think Eden is one brand that sells it in bulk.
