While planning my 2008 PCT ride I did a lot of research on  things like stoves and tents. After much deliberation I finally decided on the Jet boil stove. During my 2-year PCT ride from the Mexican border to that of Canada I came to appreciate more and more the Jet Boil. It is very easy to light, it never flares up and is fuel efficient. One of the large cannisters would last me 6 or 7 days cooking two meals per day. It is safer to use in a tent - I sometimes cooked in the vestabule -  because there is no inflammable or explosive liquids to carry or pour and possibly spill - and it never flares up.
