Not a really fine idea. But, my husband, whose hobby it is to rebuild cars, 
says, drain the oil and fluids, put it on blocks to save the suspension and 
it can sit there for years. All of the seals(transmission, rear end, etc) 
will dry out, though. He's restarted things that were starting to grow 
roots.

Better to have someone come drive it once a month or even just start it and 
let it run till warm.
