Absolutely.

An old quote attributed to Eisenhower during WWII :
Plans are nothing; planning is everything.

The point being that you are always in a state of planning. Note this 
rejects either extreme of not planning since change is inevitable, nor 
locking into a plan hoping that change will not occur. Make a solid plan 
(including the food spreadsheets, gear lists, resupply plans, ...) and then 
be ready to change it as the hike unfolds.
