The only backpacking I've done in Colorado was last summer's Colorado Trail
hike. The Weminuche Wilderness is beautiful and probably big enough for you
to hike around in for two weeks -- it's pretty popular, though, so there are
restrictions on where you can camp, light campfires, etc.. I've driven
through parts of Rocky Mtn National Park -- also big and beautiful.
