APPALACHIAN TRAIL MENU   05 
BACKPACKING  LITE SEVEN DAY PLUS ?O- DAY MENU 
Recipes by  Lonetrail  
(big eater double  and pig out) 
DINNER 
Macaroni and Cheese w/ (Sweet Sue Diced  Ham) 
Boil 2/3 cup  of water add macaroni, stir and cook until tender. Mix with 
cheese sauce, add  & stir in Sweet Sue's 3 oz pouch of pre cook diced ham 
Serve with Flour Tortilla. Brush on olive oil and  sprinkle with paprika. 
Wipe bowl clean with  Tortilla 
Knor?s Pesto  Pasta with Olive Oil 
? Cup of water, ?  cup of olive oil, mix pesto sauce and bring to boil. 
Reduce heat stir  occasionally for five minutes. Cook and drain 8-12 oz of pasta. 
Toss pasta &  pesto sauce 
Serve with  Pita Bread brush on olive oil and sprinkle with paprika & grated  
cheese 
Betty Crocker Au  Gratin Potatoes with dried beef (makes 2 ? severing or one 
if your  hungry) 
Stir potatoes  (2/14 oz pouch) with sauce mix in 1 ? cups of water, ? cup of 
powder milk add  teaspoon Butter Buds, bring to boil. Add desired amount of 
Dried Beef stir &  simmer till done. Wipe bowl clean with  fingers 
Spaghetti with  Ragu Tomato Sauce & Chicken of the Sea Imitation  Crab 
Cook and drain 8-12 oz  of pasta, open one or two Ragu Sauce pouch (2 ? oz 
ea.) stir in cold, open pouch  of Crab meat (3.5 0z) stirs in cold.  Oh La La. 
Lipton's Jalapeno Jack Pasta  (Rotini Pasta in a spicy jalapeno pepper jack 
cheese  sauce) 
Bring 1 ? cups of  water, ? cup of powder milk add teaspoon Butter Buds, 
bring to boil. Stir until  pasta is tender. Let stand for two to three minutes 
until sauce  thickens. 
Serve with Pita bread  
Polar Pink  Salmon with Rice w/ vegetables of  choice 
Boil 2 cups of  water with freeze dry Vegetables, Pour 1 1/4 of instant rice 
into pot and cover.  Let stand several minutes. Drain if necessary. Stir in 3 
oz pouch of Pink  Salmon. 
Serve with Casbah  Hummus (? cup of cold water add hummus to a smear) and 
Pita bread   
Taste Bite  Vegetable Kofta Pilaf w/ Chicken of the Sea popcorn  shrimp 
Cut open Tasty  Bite pouch empty into pot add 3 tablespoons of water over 
rice, cover for 3-4  minutes. Remove and fluff up with fork. Stir in popcorn 
shrimp cold.  This meal can be eaten cold.  Munch, munch   
Zatarain?s  Jambalaya Rice w/ Jack Link?s Smoked  Sausage 
Slice sausage into pot brown  for two to three minutes, add ? cup of water 
stir in contents of pouch heat for  two to three minutes. Mardi Gras Special 
Enjoy 
DESSERT 
Gelatin 
Boil ? cup of  water stir in ? package, serve on chilly nights only 
Meijer  Cookies?n Cream Pudding 
Pour 1/2 cup  of cold milk into bowl add ? of mix from package and stir with 
wire whist until  blended let set until desired thickness. 
Betty Crocker  Rice Pudding. 
Heat one cup  of milk, 2 ounces of pudding from package and stir frequently 
(pudding will be  thin). Cool 30 minutes.  
Breakfast  
Cold assorted  Cereal or Granola 
In zip lock  snack bag add one cup of cereal, raisins or other dried fruit, 
heaping  tablespoon of dried milk one package of sweet & low or sugar. Just add 
cold  water to bag and stir. 
Quaker Oats  hot assorted Cereals   
Boil ? cup of  water add one heaping tablespoon of dried milk. Pour on cereal 
and add dried  fruit as desired. Sweeten  
Lunch  
Delallo Provolone cheese w/ Margherita Pepperoni and pita  bread) 
Beefy Jerky,  Country Sausage, Smoked sausage, Fish in pouch like Tuna,Salmon 
Sweet Sue's  Meats in pouch Ham, Chicken  or Turkey. Don't be stingy with  
lunch 
Beverages

Chai Tea, Tea, Coffee, Apple Cider                     Apple Cider, Kool Aid, 
Gatorade. 
Snacks 
Energy bars, Little Debbie, Beef Jerky,  Peanut butter, crackers, Pepperoni 
sticks w/cheese.  
Eat, eat, eat  you are burning around 4000 t0 6000 calories a day.
