If you're drying stuff that you won't be using for several months, it would 
be extra protection if you vacuum seal. But otherwise a freezer weight zip-loc 
is fine. In fact, if you can find the stand-up pleated bottom bags is even 
better. You can rehydrate right in there, even with hot water (wrap it in 
something insulating for a bit to soak), and easily eat right from the bag. But I've 
heard people say they can't find the pleated bottom bags very easily this 
year.
