[pct-l] Re: Butter or Margarine Substitute

Do people actually cook on the trail, to the point where they need butter/margarine/something to fry with?? Or is the tasty goo of your choice merely for dressing up tortillas, bagels, etc? I'll be thru-hiking in '04 and plan on bringing olive oil--but simply to use as a caloric boost in my boil-water-then-drop-in-quick-cooking-food meals. :)

Campy--I'm curious about this claim that olive oil has trans fat--where have you seen that? I teach nurtition ed for a living and I've never come across any literature that proposes that. What I've read says that olive oil is great to eat because it doesn't have trans fat or saturated fat or cholesterol and that dairy products (I'd imagine ghee would be included in this) have trace amounts of trans fats, as well as cholesterol and saturated fat.

All that said, science, and especially nutrition, isn't fact; it's all composed of theories. HYOH, EYOF (eat your own food). :)

I take back what I said earlier. I checked out my ghee on the tip of a
spoon and found the flavor to be gross, sorta. Not _really_ gross, but
sorta gross. But it did have a slight flavor nuance of pure creamery
butter ;-)

You're right, ghee probably isn't going to win awards when served on a
tortilla. I lost touch 'cause haven't used ghee as a spread for a long
time (I'm not much into eating processed grains like bread or tortillas).

I'll stick with cooking with ghee because it bahaves well in a hot pan,
and has no trans fats. Even olive oil has some trans fats, and these
increase when the oil breaks down while being heated.

Several folks have requested a copy of the one-page "What's Ghee, McGee"
and I'll include you on its distribution for your interest.
