I can identify with your questions, am not a beginner but a section hiker.
I think you really need to get a copy of the PCT guide books, which it
appears to be a problem.  You could then see how many miles it is to your
first resupply.  Then if you are hiking 10 miles a day to start out with and
it is 50 miles then pack 5 days of food.  As your pace increases to 15 miles
a day for 50 miles then you would only have to pack 3 1/2 days of food.
Water is again on the availability, If you are using two litres a day, then
you will have to pack that much and be very aware where the next water
supply is. Have you read any of the following:
