[pct-l] All-Vegetable Burritos-Addendum



BlankAll-Vegetable Burritos
Yields: 8 servings.

Meatless but surprisingly hearty & delicious. Can be eaten warm or cold. =
Recipe can be halved easily or doubled easily. Enjoy!

Lime Marinade (recipe below)
1 pkg (about 10 oz) frozen corn kernels, thawed
1 can (about 15 oz) red kidney beans, drained
1 medium-size cucumber, peeled, seeded, & finely chopped
1/2 c sliced onions (green best)
2 Tbsp minced cilantro
opt. shredded cheese, your choice (Vegans: Use soy)
8 warm flour tortillas (Many different flavors to choose from)

Lime Marinade: In a nonmetal bowl, stir together 1 tsp grated lime peel; =
1/3 c lime juice; 2 Tbsp distilled white vinegar; 1 Tbsp honey; 2 tsp =
Dijon mustard; 1 tsp ground cumin; 2 cloves garlic, minced or pressed; & =
1 fresh jalapeno chile, seeded and minced. (Note: Lime reacts in metal.)

Rehydrate anything you dehydrated in small amounts of hot water, adding =
a little water @ a time.=20
Pour Lime Marinade into a large heavy-duty ziplock bag. Add corn, beans, =
cucumber, onions, and cilantro. Seal bag; rotate to mix vegetables. If =
eating cold, put in stream (anchored so you won't loose it) or in snow =
for at least 20 min; rotate bag occasionally.=20

To eat cold, scoop out corn mixture with a slotted spoon or drain. =
(Discard marinade); then divide equally among tortillas. Add cheese. =
Roll up tortillas to enclose filling; eat out of hand.

To eat warm, add to pot, heat thru, & proceed as above.=20

If eating warm, dehydrate the vegetables separately or as a unit. First, =
mash the beans. Cucumber, I would leave fresh.

If eating cold, dehydrate the corn & maybe the onions. Depending if =
you're using the green onions. (I like mine fresh, esp. if I'm eating =
cold.)

Package the dry ingredients of the Lime Marinade together. Note: The =
lime, can be seeded. Grate the peel. Slice the lime. Dehydrate both; or =
bring fresh. Chile, after seeded & minced, dehydrate. Package the lime =
(rind & slices) separate from the chile.

Nutrition information:
Per serving: 189 calories (15% calories from fat), 3 grams total fat, =
0.4 grams saturated fat, 0 milligrams cholesterol, 256 milligrams =
sodium, 34 grams carbohydrates, 4 grams fiber, 7 grams protein, 68 =
milligrams calcium, 2 milligrams iron.
Note: If cheese is used, most of the above figures are increased. (I'm =
too tired right now to configure. Sorry!)
