You have a wonderful trail near you. The Ouacita Trail in Oklahoma/Arkansas. It's 220 miles long recently built so therefore well built   With a great guidebook ,easy resupply. It's like a mini AT
In the center section there are shelters. I did it as a circle hike combined with the Ozark Highlands trail plus the bus to link them. Of course they are both a spring time/fall hike. I think the summer would've rather hot. 
I started in the snow in Feb and had daffodils blooming by the end
