I'm also in LA, section hiking this year, and highly recommend the Sierra Club's a Wilderness Travel Course. You learn the 10 Essentials, LNT, hiking and basic rock climbing. It's physically challenging and a good intro to backpacking if you're new. 

I echo the comments about LA, there's many places to hike in the Santa Monica and San Gabriel Mountains. SoCal Hiker has a six-peak challenge that's good training: http://socalhiker.net/a-six-pack-of-peaks/
