I take my midweight fleece and stuff anything I am not wearing in it. Then tie the open bottom end like you would a big trash bag. It stays tied all night, and I am not adding any weight to my pack.

To deal with the wandering pillow issue, I usually take my pack or a rock and put it just north of where my pillow should be. That tends to keep it from drifting away during the night.
