Dear Reinhold

Cooked carbohydrate became alpha state ( We call this state alpha in Japan,
it is a paste like state ), so we can digest easily, but it return to the
precooked state in several days, so we usually cook once again. The
carbohydrate in the naturally (or may heat ) dried food will turned into
precooked state in the long run(several weeks). The freeze dry food
maintains cooked state for a long time.

I don't know the state change of protein. It may remain cooked state or
not. The study of digestive rate of egg is also shocking for me. But, I
usually like cooked state, for example, I do not like Sashimi ( raw fish )
and Sushi.

Concerning the digestive rate, a few studies were carried out. There may
be no gender difference, but the author maintains the digestive rate may
related to the length of small intestine. Therefore, some people will be
largely influenced by the no-cooked state.

I was proved to be a hiker trash from long time ago, based on the American
standard. The investigation of hiker barrel or trash box is a great delight
for me. Thanks very much for American friends. Therefore, Shroomer could
not spoil me.
