I have done a similar strategy with f-d foods and store-b ought carbs - hummus, stove-top stuffing, instant mashed potatoes, dehydrated bean mixes, etc.
Other companies that offer bulk f-d foods are Nitro and Provident Pantry ( www.beprepared.com ), which is my favorite.

I was at a "Plan and Prepare Expo" yesterday and talked extensively with
a supplier of "Thrive freeze dried foods. They sell bulk freeze dried
food in #10 cans, average 45 servings per can. They have an amazing
variety of products sold this way. I like putting my own recipes
together to control the flavor and salt content.

I'll be making food for my month long trek this summer using some of
their ingredients. A 45 serving can of shredded cheese is about $26 so
this seems reasonable. I've been dehydrating foods for many years but
it is time consuming and the results in the field are not always reliable.
