I've never done that with Mountain House, but I've done a similar thing
with Jerky and Gatorade powder. It was a terrible idea in both instances.
The jerky was too tough to bite, and the Gatorade powder was . . . gross.
It expanded and got all chunky.
My recommendation would be to assume the one-week expiration is accurate.

I won't disagree with Yogi but I will offer a different answer based on my
2006 thru-hike experience. Prior to my departure I ordered the bulk
supplies from both Mountain House and MaryJane Organics and re-packaged all
26 resupplies I used along the trail into zip-lock bags. I had absolutely
no problems with this approach. Meals re-constituted without any issue
even after seveal months. During the re-packaging, I did make every effort
to fully remove any excess air from the zip-locks and I did you the
freezer-weight zip log bags which are slightly heavier. I would use the
same approach in the future.
