So, to turn off an alcohol stove, you advise dumping your dinner on it.

You can turn off a beer can stove my inverting your pot and covering the stove.  This will  starve it of oxygen.  Of course, this assumes it hasn't already gotten out of hand.

P.S.  I am not an alcohol stove user.  When I do use a stove, it is a Pocket Rocket canister stove.

Brick, You are experienced. Right?  My fire concern is about those who are either inexperienced or just careless - or if the unexpected happens. How much does your soda can weigh? Add
 to that the weight of the extra fuel that is used, since you can't turn it off. And you can't simmer if you want to - - - . And, I suppose you realize that your alcohol flame is, technically, an OPEN flame. Open flames are illegal in many parts of Southern California.
HYOH - that's the bottom line - of course.

PS; Since it is so much easier to hike the PCT than it is to rode it, I am seriously considering hiking, rather than riding, this summer. My plan is to go from Horseshoe Meadows to T. Meadows, and climb Half Dome on the way down to Yosemite Valley. I will bring my canister stove and also my solar shower. I will be 77 years old in October. Perhaps if I was younger I would be more worried about carrying a few extra ounces.

That is 1/3 of a pound

For a horse packer that is only a little bit. For a hiker, that is not
"a little."

I've never has my soda can stove blow over inside it's heat shield.
You can mis-use any tool. Soda can stoves are not an exception.
