I hiked with someone who carried her water in a gallon GLASS bottle. It broke in her pack. Not pretty. Glass shards and water soaked food... She uses nalgenes now.
Just sayin. HYOH. YMMV.

You could add carrying your water in glass or steel bottles
And use leaves for your toilet paper.

It seems the most environmental way to deal with your food would be
to buy it in bulk, store it in your pack in bulk and then prepare it
in your metal pot, eating out of your pot with your metal or bamboo
spoon, and then drinking the water you use to wash your pot. That
would require the least packaging to begin with, the least packaging
during transport and save as much water as possible.
