I use a lot of f-d meats, veggies, fruits, and cheese to augment carbs bought on the trail (mashed potatoes, ramen, lipton sides, etc.).  They can provide lots of variety this way.  I also mix up a few meals at home - cous-cous with chicken, broccoli, mushrooms, jack cheese, etc.

F-D fruits are great to add to oatmeal, cold granola cereal, instant pudding, or just snacking along the Trail.

F-D rehydrates faster IMO.  The meats taste surprisingly good.  I buy it online, and yes, it's expensive.  Although I'm not sure it's all that expensive per meal.  What I buy comes in #10 cans.
