I believe if you can find bulk bins your best choice for dehydrated  
beans is black bean soup mix, dehydrated refried beans and/or lentil  
soup mix. For the soups, just put less water and you have something  
like refried beans. If you can't find bulk bins, you can sometimes  
find this as a dehydrated soup usually in a single-serving cardboard  
cup.

For potatoes, they mean mashed potatoes. Idahoan is easiest to make  
because you just add water and it has different flavors, but other  
brands have less chemical-sounding ingredients and even if they say  
to add milk and butter, you can add just water.
