My coldest nights were in Southern California. I needed a light  
puffy. It even snowed on Memorial Day weekend in 2008.

A good resource for a lot of your questions is Ray Jardine's PCT  
Hiker's Handbook or his Beyond Backpacking. You might find it at the  
library. You don't have to follow all his suggestions (and  
specifically stay away from corn pasta--it's not good), but he does  
offer good info.
