I like JavaJuice, with hot water its really good, and in a pinch you can drink it straight from the packet for the buzz.

I like coffee, but wanted something more robust than Folgers.  I have gotten something called Mud Gourmet Coffee that comes in a French Roast.  It's made by Harvest Foodworks.  It comes in a bag and you steep it like tea.  Not the cheapest - $1.50 for 2 bags.  You can get it at REI if they still carry it.
