South to North:

Russell is a significant side trip from the PCT over the Whitney-Russell Col to high class 3 or harder
climbing. It probably requires a Whitney zone permit.

Tyndall is readily accessed by a class 2-3 route from the PCT.
Williamson is not on the crest and is a significant side trip from the
PCT. It is hard class 3 climbing if you find one of the routes, else much harder.
Split is easily accessed from the PCT and straight-forward class 2
climbing.

Middle Palisade from that side is unfamiliar.

The northern Palisades are all significant side trips from the PCT.

Sill is a class 2-3 climb after a long boulder-hopping approach.
Polemonium has the same long approach as Sill to a final very exposed class
4 (roped) climb.
North Palisade has a high class 3 route (roped for most people).
Starlight is a moderate class 5 climb requiring roped belays and
protecton.
Thunderbolt is a difficult class 5 climb requiring roped belays and
protecton, though it is hard to protect. Some people throw a rope over the top for an upper belay.

You failed to meniton:

Langley is a relatively easy class 1-2 side trip.
Whitney is a short side trip on a trail but requires a Whitney zone permit.
Muir is a side trip from the Whitney trail, class 3, also in the Whitney zone.
Shasta is accessible from Mt. Shasta City and requires boots, crampons, and ice axe.
White Mtn is an easy walk but a long drive up from Big Pine (below the Palisades).
