The advantage of doing a single (relatively) short section like Stevens to Snoqualmie is that you hopefully get to pick the day you start to coincide with a lengthy window of good weather. Whereas on a thru-hike you'd probably have to just take the weather as it comes, wherever you are.
Also note that the Stevens to Snoqualmie traverse occurred in early April, which is technically spring, not winter. Aside from being pedantic, it does make a difference - April snow and April weather are much friendlier for a backcountry traverse than, say, February.
