Neil, I did not have quite extensive knee surgury as you, but I did have torn meniscus in left knee cleaned up through arthroscopic surgery in July 2005.  I am hiking about 100 miles of the JMT this year.  I occasionally get a little pain in the left knee, but as I hike, it just as quickly disappears.  It has never been debilitating pain.  I think you will be alright to hike in time.  Just follow doctor's and rehab instructions.
