[pct-l] Simmer with alcohol stove

Simmering is really a kitchen concept not particularly appropriate for the 
backcountry.  Out there you just turn off the stove (or let it burn out) and put your pot in a pot 
cozy.  See http://trailjournals.com/gear.cfm?trailname=2137 for 
a photo and brief description of a shiny aluminum coated pot cozy, as well as a pointer to Trail Dad's very neat alcohol stove.  People also make cozies using neoprene or 
ensolite.  

The way you use the pot cozy is to bring the food to a boil (or boil it as long as the alcohol lasts) then put 
the pot in the pot cozy for the required simmer time, usually something like 10 
minutes.  Eat out of the pot while it stays in the cozy if you want a very warm 
dinner.
