You've hit the nail directly on the head. In most cases where caches are,
there are water sources roughly the same distance you reference. And no,
many don't want to leave the trail to get water.
Some of the most accomplished hikers I know, including Billy Goat, Scott
Williamson, and Eric Dykeman, report not using any caches and instead use
the water natural sources referenced in the Guidebook. It's what all the
hikers did who hiked before there were caches.

I have a question about this. I have the data book. According to the
book, there is water past Doble Camp at a number of places. Are they
all dry or too difficult to get to? For example, one of the listings
mentions Delamar spring .9 miles from the trail. Is that spring dry
or do people just not want to leave the trail in search of water?
