[pct-l] dehydrating veggies

I'd like to talk to someone who has some experience dehydrating their own veggies.  I ventured into this world a few months ago, but I'm a little concerned about spoilage.  e.g. if I start to dehydrate for an '08 thru-hike soon, will the veggies spoil by then?  What are some tips?  etc.
