Another idea for eating trout...

For the relatively small trout you catch in the Sierra (usually), you 
can poach the fish rather than fry or cook it.  Cut off head and tail.  
Find a bunch of little sticks and put them in the cookpot so they are an 
inch or so deep.  Bring a half inch of water to a boil.  Put the trout 
on the sticks and cover for no more than a couple minutes.  The whole 
idea is to heat the fish so the bones and flesh separate, not cook it.  
Fresh trout don't need cooking like bottom fish...
